The defender had only scored two goals in his previous 175 games for the club, but clinically smashed the ball into the roof of the net after 20 minutes to put the Daggers ahead.
Asa Hall hit the post for Town soon afterwards, before Foster doubled his tally after 56 minutes, nudging home a cross from Sam Saunders.
Luton hit back immediately with Ian Henderson powering home after 58 minutes.
The visitors came close to snatching an equaliser late on, but Tony Roberts saved well from Tom Craddock.
