The win moves Vitesse into the top half of the Eredivise table, while piling the pressure on luckless Sparta.
Lasse Nilsson opened the scoring after 27 minutes and his effort appeared set to be the difference between the two sides.
However, Wiljan Pluim stepped off the bench to add a second in the closing moments and wrap up the points.
Vitesse have now suffered only one defeat in their last five fixtures, while Sparta remain in trouble towards the foot of the table after taking just one win from six outings.
